Instructions
- Drain the chickpeas and combine them in a bowl with mayonnaise, sriracha, cilantro, lemon juice, and salt.
- Mash the chickpeas until they are mostly broken down and well mixed with the dressing.
- Lay out the tortillas and add half of the spinach, carrot, bell pepper, and chickpea salad to each tortilla.
- Fold the sides of the tortillas in and roll them up from the bottom like a burrito.
- Serve immediately or refrigerate until ready to eat.
