Smashed Curry Chickpea Salad

Instructions
- Prepare the produce by chopping the apples, walnuts, and dates (if using) and shredding the carrots.
- Drain and rinse the chickpeas, then add them to a medium bowl with the Greek yogurt and lemon juice.
- Mix well and mash with a fork, leaving some chickpeas whole for texture.
- Add the chopped apples, carrots, walnuts (or cashews), raisins/dates, curry powder, and olive oil, and toss to combine.
- Season with sea salt and pepper to taste and serve.
