Smashed Chickpea Salad Sandwich

Ingredients

The salad filling

  • 1 ½ cups chickpeas, drained and rinsed
  • 6 tablespoons chickpea brine
  • ½ cup almonds or pumpkin seeds
  • ½ cup roughly chopped carrots
  • ½ cup roughly chopped celery
  • ¼ cup roughly chopped pickles
  • 1 tablespoon roughly chopped fresh dill
  • 1 tablespoon pickle juice
  • 1 tablespoon lemon juice
  • ½ teaspoon sea salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • ¼ cup chopped cilantro (optional)

To serve

  • 4 slices your favorite sandwich bread
  • to taste sliced cucumber
  • to taste lettuce
  • to taste tomato

Instructions

  1. Drain the chickpeas, reserving the juice.
  2. Chop almonds, carrots, celery, pickles, and dill in a food processor and transfer to a large bowl.
  3. Pulse chickpeas in the food processor until chunky, then add to the bowl, reserving ¼ cup.
  4. Puree the reserved chickpeas into a paste and mix with the other ingredients in the bowl.
  5. Add pickle juice, lemon juice, salt, garlic powder, and pepper to the bowl and mix well.
  6. Pour in the reserved chickpea brine and beat until thick and creamy.
  7. Serve the mixture on bread with cucumbers, tomatoes, and lettuce.
