Smashed Chickpea, Avocado, and Pesto Salad Sandwich

Ingredients

The salad

  • 1 15 ounce can chickpeas, rinsed and drained
  • 1 large ripe avocado
  • 2 tablespoons Basil Pesto
  • Juice from ½ lemon lemon juice
  • to taste salt
  • to taste pepper

The sandwich

  • Slices of bread (whole wheat recommended)
  • if desired spinach leaves

Instructions

  1. Remove the outer skins from the chickpeas by rolling them on a towel.
  2. In a medium bowl, combine the chickpeas and avocado, and smash them together with a fork until well mixed, leaving some chunks for texture.
  3. Stir in the pesto and lemon juice, and season with salt and pepper to taste.
  4. Spread the chickpea salad on slices of bread and add spinach leaves if desired.
  5. Cut the sandwich in half and serve.
