Smashed Chickpea, Avocado, and Pesto Salad Sandwich

Instructions
- Remove the outer skins from the chickpeas by rolling them on a towel.
- In a medium bowl, combine the chickpeas and avocado, and smash them together with a fork until well mixed, leaving some chunks for texture.
- Stir in the pesto and lemon juice, and season with salt and pepper to taste.
- Spread the chickpea salad on slices of bread and add spinach leaves if desired.
- Cut the sandwich in half and serve.
