Crunchy Microwave Potato Chips

Ingredients

  • 1 medium baking potato
  • ½ teaspoon extra virgin olive oil
  • to taste salt
  • as needed spray olive oil

Instructions

  1. Slice the potato into very thin rounds.
  2. Place the potato slices in a large ziplock bag and drizzle with olive oil.
  3. Seal the bag and toss to coat the potatoes evenly with oil and salt.
  4. Cover a large plate with parchment paper and lightly mist it with olive oil spray.
  5. Arrange the potato slices in a single layer on the parchment.
  6. Microwave the slices on high for 5-10 minutes until crisp, checking frequently to avoid burning.
  7. Allow the chips to cool for about 2 minutes before serving.
