Ingredients

The Chips

  • 1 medium-large potato Russet baking potato
  • 2-3 inches oil for frying

The Seasoning

  • to taste seasonings of choice

Instructions

  1. Heat oil to 375 degrees.
  2. Slice the potato without peeling using a mandoline or food processor.
  3. Soak the potato slices in a bowl of very cold water for about 10 minutes, stirring gently.
  4. Rinse the slices a couple of times in cold water and lay them flat on paper towels to absorb excess water.
  5. Working in batches, fry the potato slices in oil for 1-3 minutes until golden brown.
  6. Remove the chips and place them on paper towels to absorb excess oil.
  7. Season immediately with salt and other seasonings of choice.
  8. Serve warm or at room temperature.
