Homemade French Fries

Instructions
- Cut the potatoes into matchsticks, ensuring they are similar in size.
- Soak the potatoes in a bowl of cold water for at least 30 minutes.
- Drain the water and thoroughly dry the potatoes with paper towels.
- Heat 3 inches of oil in a large, deep pot to 300°F.
- Fry 1/3 of the potatoes until tender, about 4-5 minutes, then repeat with the remaining potatoes.
- Increase the oil temperature to 400°F and fry 1/3 of the potatoes until golden brown, about 1-3 minutes, then repeat with the rest.
- Place the cooked fries on a paper towel-lined sheet pan.
- Sprinkle with salt and pepper, add parsley if desired, and serve immediately.
