Homemade French Fries

Ingredients

  • 2 ½ pounds Russet potatoes
  • 3 inches oil for frying
  • to taste salt
  • to taste pepper
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Cut the potatoes into matchsticks, ensuring they are similar in size.
  2. Soak the potatoes in a bowl of cold water for at least 30 minutes.
  3. Drain the water and thoroughly dry the potatoes with paper towels.
  4. Heat 3 inches of oil in a large, deep pot to 300°F.
  5. Fry 1/3 of the potatoes until tender, about 4-5 minutes, then repeat with the remaining potatoes.
  6. Increase the oil temperature to 400°F and fry 1/3 of the potatoes until golden brown, about 1-3 minutes, then repeat with the rest.
  7. Place the cooked fries on a paper towel-lined sheet pan.
  8. Sprinkle with salt and pepper, add parsley if desired, and serve immediately.
