Crispy Homemade Oven-Baked French Fries

Instructions
- Preheat the oven to 475ºF (or 450ºF convection).
- Cut the potatoes lengthwise into ¼-inch thick sticks.
- Soak the sliced potatoes in hot tap water for 10 minutes.
- Drain and dry the potatoes thoroughly.
- Line a baking sheet with parchment paper and place the potatoes on it.
- Drizzle with olive oil and sprinkle with kosher salt, then toss to combine.
- Spread the potatoes in a single layer and cover with foil.
- Bake for 5 minutes, then remove the foil and continue baking for 20 minutes or until golden and crisp, rotating the pan after 10 minutes.
- Season with more sea salt as needed and serve immediately.
