Crispy Homemade Oven-Baked French Fries

Ingredients

The fries

  • 2 to 4 pieces Russet potatoes
  • 1½–2 pounds Russet potatoes (total weight)

The seasoning

  • ¼ cup olive oil
  • 1 teaspoon kosher salt
  • to taste none nice flaky sea salt (such as Maldon)

Instructions

  1. Preheat the oven to 475ºF (or 450ºF convection).
  2. Cut the potatoes lengthwise into ¼-inch thick sticks.
  3. Soak the sliced potatoes in hot tap water for 10 minutes.
  4. Drain and dry the potatoes thoroughly.
  5. Line a baking sheet with parchment paper and place the potatoes on it.
  6. Drizzle with olive oil and sprinkle with kosher salt, then toss to combine.
  7. Spread the potatoes in a single layer and cover with foil.
  8. Bake for 5 minutes, then remove the foil and continue baking for 20 minutes or until golden and crisp, rotating the pan after 10 minutes.
  9. Season with more sea salt as needed and serve immediately.
