Crispy Baked French Fries

Instructions
- Preheat the oven to 475°F and adjust the oven rack to the lowest position.
- Scrub the potatoes and cut them into 10 to 12 wedges.
- Soak the potato wedges in hot water for 10 minutes to release starch.
- Cover a baking sheet with parchment paper, drizzle with ¼ cup oil, and sprinkle with salt and pepper.
- Drain and dry the potatoes, then toss with the remaining 1 teaspoon of oil.
- Arrange the fries in a single layer on the baking sheet and cover with foil.
- Bake for 5 minutes, then remove the foil and bake for another 10 minutes.
- Rotate the pan and bake for an additional 5 to 10 minutes until golden brown.
- Flip the fries and bake until crisp, about 5 to 10 minutes longer.
- Season with additional salt and pepper before serving.
