Ingredients

The fries

  • 2 to 4 pieces organic russet potatoes

The oil and seasoning

  • ¼ cup canola oil or vegetable oil
  • 1 teaspoon canola oil or vegetable oil
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 475°F and adjust the oven rack to the lowest position.
  2. Scrub the potatoes and cut them into 10 to 12 wedges.
  3. Soak the potato wedges in hot water for 10 minutes to release starch.
  4. Cover a baking sheet with parchment paper, drizzle with ¼ cup oil, and sprinkle with salt and pepper.
  5. Drain and dry the potatoes, then toss with the remaining 1 teaspoon of oil.
  6. Arrange the fries in a single layer on the baking sheet and cover with foil.
  7. Bake for 5 minutes, then remove the foil and bake for another 10 minutes.
  8. Rotate the pan and bake for an additional 5 to 10 minutes until golden brown.
  9. Flip the fries and bake until crisp, about 5 to 10 minutes longer.
  10. Season with additional salt and pepper before serving.
