Crispy Oven Fries

Instructions
- Preheat the oven to 450°F (230°C).
- Cut the potatoes into ¼ inch matchstick sized strips.
- Soak the cut potatoes in a bowl of water with 2 tablespoons of salt for about 30 minutes.
- Dry the soaked potatoes thoroughly.
- In a bowl, toss the dried potatoes with oil (or veggie broth) and cornstarch if using.
- Place the fries on a parchment lined cookie sheet in a single layer and bake for 15 minutes.
- Remove the fries and turn them over, then spread them into a single layer again.
- Bake for another 10-15 minutes or until golden brown.
- While hot, add the remaining salt and pepper to taste, then serve.
