Crispy Oven Fries

Ingredients

  • 2 pounds potatoes
  • 1 tablespoon roasting oil or veggie broth
  • 2 teaspoons cornstarch
  • 2 tablespoons sea salt for soaking
  • ½-1 teaspoons sea salt for flavor
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Cut the potatoes into ¼ inch matchstick sized strips.
  3. Soak the cut potatoes in a bowl of water with 2 tablespoons of salt for about 30 minutes.
  4. Dry the soaked potatoes thoroughly.
  5. In a bowl, toss the dried potatoes with oil (or veggie broth) and cornstarch if using.
  6. Place the fries on a parchment lined cookie sheet in a single layer and bake for 15 minutes.
  7. Remove the fries and turn them over, then spread them into a single layer again.
  8. Bake for another 10-15 minutes or until golden brown.
  9. While hot, add the remaining salt and pepper to taste, then serve.
