Instructions
- Peel the potatoes if desired and cut them into 1/4-inch matchsticks.
- Soak the cut potatoes in cold water for at least 15 minutes or up to 24 hours.
- Drain the potatoes and pat them dry with kitchen towels.
- Heat oil in a Dutch oven or deep fryer to 330 degrees Fahrenheit.
- Fry 1/3 of the potatoes for 4 minutes, then drain them in a colander.
- Repeat the frying process with the remaining potatoes.
- Increase the oil temperature to 350 degrees Fahrenheit.
- Fry the potatoes again in batches until golden brown, about 3 to 4 minutes.
- Remove the fries, season with salt, and serve.
