Homemade French Fries

Ingredients

The potatoes

  • 2 pounds russet potatoes

The frying oil

  • 5 cups vegetable oil

The seasoning

  • to taste salt

Instructions

  1. Peel the potatoes if desired and cut them into 1/4-inch matchsticks.
  2. Soak the cut potatoes in cold water for at least 15 minutes or up to 24 hours.
  3. Drain the potatoes and pat them dry with kitchen towels.
  4. Heat oil in a Dutch oven or deep fryer to 330 degrees Fahrenheit.
  5. Fry 1/3 of the potatoes for 4 minutes, then drain them in a colander.
  6. Repeat the frying process with the remaining potatoes.
  7. Increase the oil temperature to 350 degrees Fahrenheit.
  8. Fry the potatoes again in batches until golden brown, about 3 to 4 minutes.
  9. Remove the fries, season with salt, and serve.
