Air Fryer French Fries

russet potatoes, peeled

Instructions
- Cut the potatoes lengthwise into slices about ⅜ inch thick.
- Soak the potato slices in water for 5 minutes.
- Drain the potatoes and cover them with boiling water for 10 minutes.
- Drain again and blot off excess water with paper towels, letting them cool for at least 10 minutes.
- Drizzle the cooled potatoes with oil and toss to coat.
- Preheat the air fryer to 380º F.
- Add the potato sticks to the air fryer basket in a single layer.
- Cook until the tips are light golden brown, shaking the basket every 2-3 minutes.
- Once cooked, transfer fries to a bowl and sprinkle with salt, cayenne, and pepper to taste.
