Ingredients

The fries

  • 1 pound russet potatoes, peeled

The seasoning

  • 3 teaspoons vegetable oil
  • ½ teaspoon kosher salt
  • 1 pinch cayenne
  • to taste black pepper

Instructions

  1. Cut the potatoes lengthwise into slices about ⅜ inch thick.
  2. Soak the potato slices in water for 5 minutes.
  3. Drain the potatoes and cover them with boiling water for 10 minutes.
  4. Drain again and blot off excess water with paper towels, letting them cool for at least 10 minutes.
  5. Drizzle the cooled potatoes with oil and toss to coat.
  6. Preheat the air fryer to 380º F.
  7. Add the potato sticks to the air fryer basket in a single layer.
  8. Cook until the tips are light golden brown, shaking the basket every 2-3 minutes.
  9. Once cooked, transfer fries to a bowl and sprinkle with salt, cayenne, and pepper to taste.
