Ingredients

  • 2 tablespoons butter
  • ½ cup finely diced onion or shallot
  • ½ teaspoon salt
  • 1 ½ cups long grain or basmati brown rice
  • 2 cloves garlic, finely minced
  • 1 ¾ cups low-sodium chicken broth
  • 2-3 tablespoons chopped fresh parsley

Instructions

  1. 1. Melt the butter in the Instant Pot using the sauté function.
  2. 2. Add the onion and salt, cooking until the onion is translucent.
  3. 3. Stir in the rice and cook for 30-45 seconds.
  4. 4. Add the garlic and broth, then secure the lid.
  5. 5. Set to Manual mode and cook for 22 minutes.
  6. 6. Allow the pressure to naturally release.
  7. 7. Fluff the rice with a fork and stir in the parsley before serving.
