Bagel Egg in a Hole

The filling

ripe Hass avocado

teaspoon
kosher salt

ground black pepper

red pepper flakes

chopped fresh herbs (cilantro, parsley, chives, etc.)
Instructions
- Slice the bagel in half and enlarge the hole if necessary.
- Spread the cut sides of the bagel with butter.
- In a small bowl, mash the avocado with salt, black pepper, and red pepper flakes.
- Heat a non-stick skillet over medium heat and toast the bagel butter-side down until golden.
- Flip the bagel and spread the mashed avocado on the toasted side.
- Return the bagel to the skillet avocado-side up and crack an egg into the hole.
- Cover the skillet and cook until the egg is set, about 3 minutes for medium-soft yolks.
- Transfer to a plate, sprinkle with desired toppings, and enjoy immediately.
