Ingredients

The bagel

  • 1 batch homemade bagels
  • 1 spray olive oil

The filling

  • 8 large eggs
  • to taste salt
  • to taste pepper
  • 4 slices center cut bacon
  • 4 thin slices heirloom tomato
  • 4 ounces avocado
  • optional red pepper flakes

Instructions

  1. Prepare the bagels and let them cool.
  2. Heat a nonstick skillet over medium heat and spray with olive oil.
  3. Scramble the eggs with salt and pepper until just set, then set aside.
  4. Cut the bagels in half and layer the scrambled eggs, bacon, tomato, avocado, and red pepper flakes to make the sandwiches.
  5. Serve immediately.
