Bacon Avocado Egg White Breakfast Sandwich

Ingredients

The sandwich

  • 2 whole whole wheat english muffins
  • 2 whole avocados
  • 4 strips bacon
  • 1 tablespoon diced green onions
  • to taste salt & pepper
  • optional sriracha

The egg mixture

  • 1 ⅓ cup AllWhites® 100% liquid egg whites
  • 1 tablespoon cooking spray

Instructions

  1. Prepare a plate with paper towels and arrange bacon strips on it.
  2. Microwave the bacon for 2 minutes, flip, and cook for another 2 minutes, flipping again and cooking for an additional 2 minutes.
  3. Spray a small ramekin with cooking spray and add ⅓ cup of egg whites, seasoning with salt and pepper.
  4. Microwave the ramekin for 1 minute to cook the egg whites.
  5. Assemble the sandwich with a toasted muffin half, avocado mash, halved bacon, cooked egg whites, green onions, and sriracha if desired.
