Ingredients

  • 4 pieces Bagels of your choice
  • 4 large eggs
  • 8 slices smoked bacon
  • 2 tablespoons butter
  • 8 slices American cheese
  • to taste sea salt
  • to taste black pepper

Instructions

  1. Cook the bacon in the oven at 400 degrees for 20 minutes or until crispy, then drain on a rack or paper towels.
  2. Lightly toast the bagels and set them aside.
  3. In a non-stick pan, melt 1 tablespoon of butter and fry 2 eggs over easy at a time, keeping the yolk runny, and season with salt and pepper.
  4. Assemble the sandwich by placing one slice of cheese on the bottom of the bagel, followed by 2 slices of bacon, the fried egg, another slice of cheese, and the bagel top.
  5. Serve and enjoy!
