Sweet and Spicy Fresh Salsa

Ingredients

  • 1 medium pickling cucumber, finely diced
  • 1 cup red and green seedless grapes, diced
  • 1 small jalapeƱo, seeds and membrane removed
  • 1 small scallion, minced
  • 1 Tablespoon raw honey or agave
  • 1 Tablespoon fresh cilantro
  • 1 teaspoon dried or 1 Tablespoon fresh parsley or basil
  • 1 unit lemon or lime, juiced
  • to taste unit Kosher or sea salt
  • to taste unit freshly ground black pepper

Instructions

  1. Combine all ingredients in a food processor and pulse a few times for a smoother salsa, or mix by hand for a thicker salsa.
  2. Chill the salsa in a non-reactive serving bowl for at least 30 minutes before serving.
  3. Store any leftovers in an airtight container in the fridge for up to 4 days.
