Peanut Butter Pretzel Cookies

Ingredients

The dough

  • 2 cups cake flour
  • 1 2/3 cups bread flour
  • 1 1/4 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons coarse salt
  • 2 1/2 sticks unsalted butter
  • 1 1/4 cups light brown sugar
  • 1 cup granulated sugar
  • 2 tablespoons granulated sugar
  • 2 large eggs
  • 2 teaspoons natural vanilla extract

Add-ins

  • 1 package chocolate chips
  • 3 handfuls crushed pretzels
  • 1/2 cup Reese’s Pieces
  • to taste sea salt

Instructions

  1. Sift the flours, baking soda, baking powder, and salt into a bowl and set aside.
  2. Cream the butter and sugars together until light, then add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla, then reduce the mixer speed to low and add the dry ingredients, mixing until just combined.
  4. Incorporate the chocolate pieces, crushed pretzels, and Reese’s Pieces into the dough.
  5. Scoop 2-3 tablespoon balls of dough onto a cookie sheet and bake at 350°F for about 7 minutes.
  6. Remove from the oven and transfer to a cooling rack, then sprinkle with sea salt.
