russet potatoes

Instructions
- Slice the potatoes into fries about ¼ to ½ inch thick and soak them in cold water for at least 30 minutes.
- Rinse the potatoes and pat them dry, then drizzle with olive oil and season with smoked paprika, garlic powder, salt, and pepper.
- Cook the fries in an air fryer at 380°F for about 10 minutes, flipping halfway, or bake them in the oven at 375°F for 20 minutes, then increase to 425°F for another 20-25 minutes until crisp.
- In a Dutch oven, heat olive oil and sauté onions, green and red peppers for 3-4 minutes.
- Add minced garlic and ground beef, cooking until the beef is browned.
- Stir in half of the chili seasoning, then add beef broth, beans, tomatoes, tomato sauce, and remaining seasoning; simmer for 20 minutes.
- Preheat the oven to low broil.
- Spread the fries on a serving dish, load with chili, and sprinkle with cheddar cheese.
- Broil for 4-5 minutes until the cheese is melted.
