Easy Cheese Fries

Ingredients

The fries

  • 2 medium to large russet potatoes
  • 2 tablespoons olive oil
  • to taste seasoning salt or salt and pepper

The cheese sauce

  • 1 tablespoon salted butter
  • 1 tablespoon all-purpose flour
  • ¾ cup milk
  • ¾ cup shredded Cheddar cheese
  • a pinch cayenne
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 475°F and grease a baking sheet.
  2. Toss potato wedges with olive oil and seasonings, then arrange on the baking sheet.
  3. Bake for 15 minutes, flip the potatoes, season again, and bake for an additional 10 to 20 minutes until crispy.
  4. In a small pot, melt butter over medium heat, then whisk in flour and cook until golden.
  5. Slowly add milk, whisking until thickened and bubbly.
  6. Remove from heat and gradually stir in cheese until melted, then season with cayenne, salt, and pepper.
  7. Serve the fries topped with cheese sauce.
