Easy Cheese Fries

Instructions
- Preheat the oven to 475°F and grease a baking sheet.
- Toss potato wedges with olive oil and seasonings, then arrange on the baking sheet.
- Bake for 15 minutes, flip the potatoes, season again, and bake for an additional 10 to 20 minutes until crispy.
- In a small pot, melt butter over medium heat, then whisk in flour and cook until golden.
- Slowly add milk, whisking until thickened and bubbly.
- Remove from heat and gradually stir in cheese until melted, then season with cayenne, salt, and pepper.
- Serve the fries topped with cheese sauce.
