Oven-Baked Cheese Fries

Ingredients

The Fries

  • 2 lbs medium potatoes (Russet baking potatoes or similar)
  • ½ teaspoon salt
  • cups shredded cheddar cheese
  • 3 pieces cooked bacon (crumbled)
  • olive oil for drizzling

The Ranch Dressing

  • ¼ cup buttermilk
  • ¼ cup sour cream
  • 2 teaspoons fresh parsley (chopped)
  • 2 teaspoons fresh chives (chopped + extra for garnish)
  • 1 teaspoon fresh-squeezed lemon juice
  • 1 small clove garlic (minced)
  • salt and pepper to taste

Instructions

  1. Preheat the oven broiler to high and line a sheet pan with foil if desired.
  2. Cut the potatoes into wedges and arrange them in a single layer on the baking sheet.
  3. Drizzle with olive oil and sprinkle with salt.
  4. Bake the potatoes in the oven about 8 to 10 inches below the heating element for 10 minutes until they start to brown.
  5. Flip the potatoes and bake for an additional 8 to 10 minutes until they are brown and tender.
  6. While the potatoes are baking, whisk together all the ranch dressing ingredients and set aside.
  7. Once the potatoes are done, sprinkle cheese over them and return to the oven for 30-60 seconds to melt the cheese.
  8. Remove from the oven, top with crumbled bacon, drizzle with ranch dressing, and garnish with extra chives if desired.
