Instructions
- Soak cashews and carrots for the cheese if making homemade.
- Preheat the oven to 425°F (218°C) and prepare a baking sheet.
- Toss the sliced potatoes with oil and salt, then spread them out on the baking sheet.
- Bake the fries for 20-25 minutes, flipping halfway, until golden brown and crispy.
- In a bowl, combine lentils with chili powder, smoked paprika, apple cider vinegar, ketchup, coconut aminos, and cayenne.
- Heat avocado oil in a skillet and add the lentil mixture, cooking undisturbed for 4-5 minutes.
- Flip the lentil mixture to brown evenly for another 3 minutes until thickened.
- Prepare the vegan cheese if making homemade.
- Assemble the dish by plating fries and topping with lentil chili and vegan cheese.
- Garnish with optional toppings as desired.
