Ingredients

The fries

  • 2 large russet potatoes
  • 2-3 teaspoons coconut oil
  • to taste black beans
  • to taste corn
  • to taste diced tomatoes
  • to taste sliced jalapeños
  • to taste vegan sour cream
  • to taste lime slices

The vegan cheese sauce

  • 1 tablespoon olive oil or coconut oil
  • 1 large carrot
  • 1 small yellow onion
  • 3 cloves garlic
  • 1 cup raw cashews
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon dry ground mustard
  • 1 tablespoon lime juice
  • ½ tablespoon tamari or liquid aminos
  • ½ cup nutritional yeast
  • 2 teaspoons paprika
  • ½ teaspoon ground nutmeg
  • cups unsweetened almond milk

Instructions

  1. Preheat the oven to 450°F and prepare baking sheets.
  2. Cut the potatoes into desired fry shapes and coat with coconut oil.
  3. Arrange the fries without touching and bake for 40 minutes until crispy.
  4. In a pan, heat oil and cook the carrots, onions, and garlic until tender.
  5. Blend the cooked vegetables with cashews and other cheese sauce ingredients until smooth.
  6. Plate the fries, top with the cheese sauce and desired toppings, and serve with lime.
