Ingredients

Crunchy Salted Caramel Bits

  • ¾ cup pure maple syrup
  • ½ tsp Himalayan salt
  • 1 tbsp ghee
  • ½ tsp baking soda
  • 1 tsp pure vanilla extract
  • ½ tsp Fleur de sel

Roasted Cashews

  • 1 cup raw cashew pieces
  • 2 tbsp ghee
  • ½ tsp Himalayan salt

Dark Chocolate

  • 300 g organic raw cacao paste
  • cup raw honey, melted
  • 2 tbsp ghee, melted

Instructions

  1. Line a rimmed baking sheet with parchment paper.
  2. In a saucepan, boil maple syrup until it reaches 310°F.
  3. Remove from heat and whisk in salt, ghee, baking soda, and vanilla; pour onto the lined baking sheet and sprinkle with Fleur de sel.
  4. Place in the freezer to set.
  5. In a skillet, melt ghee and salt, then add cashew pieces and roast until golden and fragrant, about 5 minutes.
  6. Let the nuts cool for a few minutes.
  7. Melt cacao paste in the microwave in intervals, stirring in between until fully melted.
  8. Stir in honey, melted ghee, and a pinch of salt until smooth, then add roasted cashews.
  9. Grease and line a 9” square baking pan with parchment paper.
  10. Pour the chocolate mixture into the pan and spread evenly.
  11. Break the caramel into pieces and sprinkle over the chocolate.
  12. Refrigerate until fully set, at least 2 hours, then cut into 36 squares.
