Garlic Toast with Balsamic Tomatoes and White Beans

Instructions
- Preheat the oven to broil and place the sliced bread on a baking sheet.
- Rub the cut side of the garlic clove over the bread and brush with olive oil.
- Heat a skillet over medium heat and add remaining olive oil.
- Add grape tomatoes to the skillet and cook until blistered and softened.
- Mince the remaining garlic clove and add it to the skillet with the tomatoes, cooking for 1-2 minutes.
- Lower the heat and stir in balsamic vinegar and rosemary, cooking until slightly thickened.
- Add butter and a pinch of salt, stirring until melted.
- Rinse and drain the Cannellini beans, then add them to the skillet and heat through.
- Broil the bread until golden brown, watching closely.
- Top each slice of bread with the tomato and bean mixture, and sprinkle with Parmesan.
