Garlic Toast with Balsamic Tomatoes and White Beans

Ingredients

The toast

  • 4 slices hearty bread
  • 1 large clove garlic
  • 2 Tbsp olive oil
  • 1 Tbsp butter
  • 2 tsp Parmesan
  • pinch salt

The topping

  • 1 pint grape tomatoes
  • 2 Tbsp balsamic vinegar
  • tsp dried rosemary
  • 15 oz. canned Cannellini beans

Instructions

  1. Preheat the oven to broil and place the sliced bread on a baking sheet.
  2. Rub the cut side of the garlic clove over the bread and brush with olive oil.
  3. Heat a skillet over medium heat and add remaining olive oil.
  4. Add grape tomatoes to the skillet and cook until blistered and softened.
  5. Mince the remaining garlic clove and add it to the skillet with the tomatoes, cooking for 1-2 minutes.
  6. Lower the heat and stir in balsamic vinegar and rosemary, cooking until slightly thickened.
  7. Add butter and a pinch of salt, stirring until melted.
  8. Rinse and drain the Cannellini beans, then add them to the skillet and heat through.
  9. Broil the bread until golden brown, watching closely.
  10. Top each slice of bread with the tomato and bean mixture, and sprinkle with Parmesan.
