Instructions
- Preheat the oven to 350°F.
- Whisk together the flour, oats, salt, and baking soda in a medium bowl.
- Stir in the brown sugar until no clumps remain.
- Mix in the melted butter until clumping starts, then add ice water gradually until the mixture is damp and sticky.
- Press half of the crumb mixture into a greased 8x8 baking dish.
- Bake the crust for 10 minutes and then remove from the oven.
- In another bowl, whisk together the pumpkin puree, eggs, and pie spice until smooth.
- Add the sweetened condensed milk, evaporated milk, and vanilla extract, mixing well.
- Pour the pumpkin mixture over the baked crust and spread evenly.
- Sprinkle the remaining crumb mixture on top of the pumpkin layer.
- Bake for an additional 25-35 minutes until golden brown and set.
- Allow to cool at room temperature, then refrigerate for 30 minutes to 1 hour before cutting into squares.
