Ingredients

Crust and Crumble

  • 1 ¼ cups flour
  • 1 ¼ cups quick or rolled old-fashioned oats
  • ½ teaspoon coarse salt
  • ½ teaspoon baking soda
  • 1 cup brown sugar
  • 6 tablespoons butter, melted
  • 4-5 tablespoons ice water

Filling

  • 15 ounces pumpkin puree
  • 2 large eggs
  • 2 teaspoons pumpkin pie spice
  • ½ cup sweetened condensed milk
  • ½ cup evaporated milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the flour, oats, salt, and baking soda in a medium bowl.
  3. Stir in the brown sugar until no clumps remain.
  4. Mix in the melted butter until clumping starts, then add ice water gradually until the mixture is damp and sticky.
  5. Press half of the crumb mixture into a greased 8x8 baking dish.
  6. Bake the crust for 10 minutes and then remove from the oven.
  7. In another bowl, whisk together the pumpkin puree, eggs, and pie spice until smooth.
  8. Add the sweetened condensed milk, evaporated milk, and vanilla extract, mixing well.
  9. Pour the pumpkin mixture over the baked crust and spread evenly.
  10. Sprinkle the remaining crumb mixture on top of the pumpkin layer.
  11. Bake for an additional 25-35 minutes until golden brown and set.
  12. Allow to cool at room temperature, then refrigerate for 30 minutes to 1 hour before cutting into squares.
