Ingredients

Pasta

  • 1 pound linguine, spaghetti or fettuccine
  • 2 tablespoons olive oil
  • 1 teaspoon fresh lemon zest
  • 2 to 3 tablespoons fresh lemon juice
  • 2 to 3 count green onions, finely chopped
  • ¼ cup chopped fresh parsley
  • ½ to 1 cup grated Parmesan cheese
  • to taste none salt and freshly ground pepper

Marinade

  • ½ cup olive oil
  • 4 cloves garlic, crushed or finely minced
  • 2 tablespoons brown sugar
  • 1 tablespoon Cajun seasoning
  • cup fresh lemon juice
  • ¼ cup minced fresh parsley
  • ¼ cup soy sauce
  • 1 to 1½ pounds chicken breasts, sliced into strips or bite-size pieces

Instructions

  1. Prepare the marinade by combining olive oil, garlic, brown sugar, Cajun seasoning, lemon juice, parsley, and soy sauce.
  2. Marinate the chicken in the mixture for at least 1 hour, preferably 6-12 hours.
  3. In a small bowl, mix lemon juice, lemon zest, olive oil, green onions, and parsley for the pasta.
  4. Cook the pasta in salted water until al dente, then drain and return to the pot.
  5. Pour the lemon mixture over the pasta and toss to combine.
  6. Heat a skillet over medium-high heat and add the marinated chicken and marinade.
  7. Cook the chicken until it's cooked through, about 4-5 minutes.
  8. Add the pasta to the skillet with the chicken and toss with Parmesan cheese.
  9. Serve immediately with extra Parmesan if desired.
