Instructions
- Preheat the oven to 350°F.
- Cream the butter and sweeteners together in a mixing bowl.
- Add the pureed pumpkin, egg, and vanilla extract, and beat until creamy.
- In a separate bowl, combine the almond flour, cinnamon, pumpkin pie spice, baking soda, baking powder, and salt.
- Mix the dry ingredients into the wet ingredients until just combined.
- Line a baking sheet with a silicone mat.
- Form balls of dough about 1½ tablespoons each and flatten them slightly on the baking sheet.
- Bake for 10-13 minutes, until golden at the edges but still soft.
- Cool the cookies on the baking sheet for 10 minutes before transferring to a cooling rack.
- Once cooled, apply the icing gently if desired.
