Ingredients

The cookies

  • 4 tablespoons unsalted butter
  • cup sweetener
  • cup brown sweetener
  • ½ cup 100% pureed pumpkin
  • 1 teaspoon vanilla extract
  • 1 large egg
  • cups blanched almond flour
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Optional icing

  • 3 oz cream cheese
  • 1 teaspoon powdered sweetener
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 350°F.
  2. Cream the butter and sweeteners together in a mixing bowl.
  3. Add the pureed pumpkin, egg, and vanilla extract, and beat until creamy.
  4. In a separate bowl, combine the almond flour, cinnamon, pumpkin pie spice, baking soda, baking powder, and salt.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Line a baking sheet with a silicone mat.
  7. Form balls of dough about 1½ tablespoons each and flatten them slightly on the baking sheet.
  8. Bake for 10-13 minutes, until golden at the edges but still soft.
  9. Cool the cookies on the baking sheet for 10 minutes before transferring to a cooling rack.
  10. Once cooled, apply the icing gently if desired.
