The Best Salmon Burgers

Instructions
- Preheat the oven and line a baking sheet with parchment paper.
- Drain the salmon well and remove bones and skin, placing it in a mixing bowl.
- Heat olive oil in a skillet over medium heat and sauté diced onion and chopped bell pepper until softened, then add minced garlic and cook for another minute.
- Add the sautéed vegetables to the salmon along with whisked eggs, mayonnaise, Dijon mustard, breadcrumbs, parsley, salt, pepper, and optional cheese. Mix well.
- Form the mixture into 4-6 patties and place them on the baking sheet. Freeze for 20 minutes.
- Heat oil in the skillet and cook the patties for 3-4 minutes on each side until golden brown.
- Serve the burgers with Dijon mustard on buns or greens.
