Ingredients

  • 1 14.5 oz can wild salmon, drained well, bones/skin removed
  • 1 tbsp extra virgin olive oil (plus more for cooking)
  • 1 medium onion, diced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 large eggs, whisked
  • 2 tbsp quality mayonnaise
  • 1 tbsp Dijon mustard (plus more for serving)
  • ½ cup breadcrumbs or almond flour
  • cup parsley, finely chopped
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 3 oz goat or feta cheese (optional)

Instructions

  1. Preheat the oven and line a baking sheet with parchment paper.
  2. Drain the salmon well and remove bones and skin, placing it in a mixing bowl.
  3. Heat olive oil in a skillet over medium heat and sauté diced onion and chopped bell pepper until softened, then add minced garlic and cook for another minute.
  4. Add the sautéed vegetables to the salmon along with whisked eggs, mayonnaise, Dijon mustard, breadcrumbs, parsley, salt, pepper, and optional cheese. Mix well.
  5. Form the mixture into 4-6 patties and place them on the baking sheet. Freeze for 20 minutes.
  6. Heat oil in the skillet and cook the patties for 3-4 minutes on each side until golden brown.
  7. Serve the burgers with Dijon mustard on buns or greens.
