The Avocado Garlic Sauce (optional)

avocado, halved and pit removed

Instructions
- Combine all salmon burger ingredients except coconut oil in a large bowl and mix well.
- Form the mixture into 8 small patties, handling them with caution.
- If not cooking immediately, refrigerate the patties for up to 24 hours.
- Heat coconut oil in a griddle or pan over medium-high heat.
- Add the patties to the pan and cook for 5-6 minutes on each side until golden brown and cooked through.
- For the optional Avocado Garlic Sauce, blend all sauce ingredients in a food processor until smooth.
- Serve the salmon patties in buns, over greens, or in lettuce wraps, optionally topping with lemon juice and the Avocado Garlic Sauce.
