Instructions
- Combine salmon, almond meal, shallots, garlic, dijon mustard, dill, lemon zest, and black pepper in a food processor.
- Pulse the mixture until coarsely ground, ensuring some small chunks remain.
- Transfer the mixture to a bowl and form into 4 burger patties.
- Preheat the grill to medium-high heat and clean the grates.
- Grill the patties for 4 minutes on one side, then flip and grill for an additional 3-4 minutes until the internal temperature reaches 130°F.
- Remove the patties from the grill and let them rest.
- For the aioli, mix together mayonnaise, lemon juice, course ground mustard, lemon zest, and minced garlic in a bowl.
- Assemble the burgers by spreading aioli on the buns and adding the salmon patties along with avocado, tomato, and red onion.
