Ingredients

Salmon Burgers

  • 20 oz salmon filet, skinned and deboned
  • ¼ cup almond meal (or almond flour)
  • 3 tablespoons finely diced shallots
  • 2 cloves garlic
  • 2 tablespoons dijon mustard
  • 1 tablespoon fresh dill
  • 1 teaspoon lemon zest
  • ¼ teaspoon black pepper

Lemon Garlic Aioli

  • cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon course ground mustard
  • 1 teaspoon lemon zest
  • 2 teaspoons minced garlic
  • to taste salt & pepper

Instructions

  1. Combine salmon, almond meal, shallots, garlic, dijon mustard, dill, lemon zest, and black pepper in a food processor.
  2. Pulse the mixture until coarsely ground, ensuring some small chunks remain.
  3. Transfer the mixture to a bowl and form into 4 burger patties.
  4. Preheat the grill to medium-high heat and clean the grates.
  5. Grill the patties for 4 minutes on one side, then flip and grill for an additional 3-4 minutes until the internal temperature reaches 130°F.
  6. Remove the patties from the grill and let them rest.
  7. For the aioli, mix together mayonnaise, lemon juice, course ground mustard, lemon zest, and minced garlic in a bowl.
  8. Assemble the burgers by spreading aioli on the buns and adding the salmon patties along with avocado, tomato, and red onion.
