Salmon Burger

Ingredients

  • 1 lb Salmon fillets (skin removed, cut into chunks)
  • cup Onion (diced)
  • 2 cloves Garlic (quartered)
  • 1 ½ tbsp Lemon juice
  • 1 ½ tbsp Full-fat Greek yogurt
  • 1 large Egg
  • 1 tbsp Dijon mustard
  • 1 tsp Sea salt
  • ½ tsp Black pepper
  • 2 tbsp Fresh dill (chopped)
  • 1 tbsp Fresh chives (chopped)
  • 2 tbsp Olive oil (for frying)

Instructions

  1. Chop the salmon and pulse in a food processor until in 1/8-inch pieces, then transfer 3/4 to a bowl.
  2. Add onion, garlic, lemon juice, Greek yogurt, egg, mustard, salt, pepper, dill, and chives to the food processor with remaining salmon and puree until smooth.
  3. Combine the puree with the chopped salmon in the bowl and mix until just combined.
  4. Form the mixture into 4 patties, about 1/2 inch thick, and refrigerate for at least 30 minutes.
  5. Heat olive oil in a skillet or preheat the grill to medium-high, then cook the patties for 3-4 minutes per side until golden brown and cooked through.
  6. Let the burgers rest for a few minutes before serving.
