Instructions
- Combine all ingredients for the dill sauce in a small bowl and set aside.
- In a large bowl, mix the salmon, onion, red pepper, dill, lemon zest, lemon juice, egg, oat flour, cayenne pepper, salt, and pepper.
- Shape the mixture into four burger patties.
- Heat a non-stick pan over medium heat and cook the patties for about 4 minutes on each side until browned.
- Toast the English muffins and layer the bottom half with arugula.
- Place the cooked salmon burger on top and add 2 tablespoons of dill sauce before topping with the other half of the muffin.
