Salmon Burger

Instructions
- Chop the salmon finely and set aside.
- In a bowl, mix salmon with onion, celery, garlic, eggs, creole seasoning, breadcrumbs, white pepper, cayenne pepper, and salt.
- Cover and refrigerate the mixture for at least an hour.
- Divide the mixture into 4 parts and form into 1-inch thick patties.
- Heat oil in a frying pan over medium-high heat and cook the patties for 3-4 minutes on each side until browned.
- Toast the buns with melted butter until golden brown.
- Assemble the burger by spreading tartar sauce on the bun, adding the patty, tomato, onion, and arugula or lettuce.
