Ingredients

The patties

  • 1 ¼ pound fresh salmon
  • ½ cup onion, small dice
  • 2-3 tablespoons minced celery
  • 1 teaspoon minced garlic
  • 2 eggs lightly beaten
  • 1 teaspoon creole seasoning
  • cup breadcrumbs
  • 1 teaspoon white pepper
  • pinch cayenne pepper (optional)
  • 2 tablespoons finely minced red pepper
  • 2 tablespoons minced parsley
  • ¾ teaspoon salt
  • 1-2 tablespoons cooking oil

The sauce and toppings

  • 2-3 tablespoons melted butter
  • 4 hamburger or brioche buns
  • tartar sauce
  • 1-2 tomatoes, sliced
  • 1 medium onion, sliced (optional)
  • 1-2 cups arugula or lettuce

Instructions

  1. Chop the salmon finely and set aside.
  2. In a bowl, mix salmon with onion, celery, garlic, eggs, creole seasoning, breadcrumbs, white pepper, cayenne pepper, and salt.
  3. Cover and refrigerate the mixture for at least an hour.
  4. Divide the mixture into 4 parts and form into 1-inch thick patties.
  5. Heat oil in a frying pan over medium-high heat and cook the patties for 3-4 minutes on each side until browned.
  6. Toast the buns with melted butter until golden brown.
  7. Assemble the burger by spreading tartar sauce on the bun, adding the patty, tomato, onion, and arugula or lettuce.
