Ingredients

The cookie dough

  • 1 and 2/3 cups all-purpose flour
  • ¼ cup unsweetened natural cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • ½ cup granulated sugar
  • ½ cup packed light or dark brown sugar
  • 1 large egg
  • 1 Tablespoon milk
  • 2 teaspoons pure vanilla extract
  • 1 Tablespoon red food coloring

The cream cheese filling

  • 4 ounces full-fat brick cream cheese
  • 1 and 3/4 cups confectioners’ sugar
  • 1 Tablespoon all-purpose flour
  • ½ teaspoon pure vanilla extract

For rolling

  • ½ cup granulated sugar

Instructions

  1. Prepare the cookie dough by whisking together flour, cocoa powder, baking soda, and salt.
  2. Beat the butter, granulated sugar, and brown sugar until smooth, then add the egg, milk, and vanilla extract.
  3. Mix the dry ingredients into the wet ingredients, then add food coloring and chill the dough for at least 1 and ½ hours.
  4. Prepare the cream cheese filling by beating cream cheese, confectioners’ sugar, flour, and vanilla until smooth, then freeze spoonfuls for at least 1 and ½ hours.
  5. Roll the frozen cream cheese filling into balls and refrigerate until ready to use.
  6. Preheat the oven and prepare baking sheets.
  7. Assemble the cookies by rolling cookie dough into balls, creating an indent, placing a cream cheese ball inside, and covering it with more dough.
  8. Roll the stuffed dough balls in sugar and bake until edges are set, then cool on a wire rack.
