Red Velvet Cookies with Cream Cheese Filling

Ingredients

The cookie dough

  • ½ cup butter, softened
  • ¾ cup sugar
  • ½ cup brown sugar
  • 1 large egg, room temperature
  • 2 tbsp milk or plant-based milk
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • cup cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • tbsp freeze-dried strawberry powder
  • 1 tsp red food coloring
  • ½ cup white chocolate chips

The cream cheese filling

  • ¼ cup cream cheese
  • 1 cup icing sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract

Instructions

  1. Combine flour, cocoa powder, baking soda, and salt in a medium bowl and set aside.
  2. In a large bowl, beat butter, sugar, and brown sugar until light and fluffy, then mix in the egg, vanilla, and milk.
  3. Add the flour mixture and beat until smooth, then fold in white chocolate chips and refrigerate for 1 hour.
  4. Prepare the cream cheese filling by beating cream cheese until light, then add icing sugar, flour, and vanilla.
  5. Scoop dollops of cream cheese filling on a lined tray and freeze until ready to assemble cookies.
  6. Preheat the oven to 350°F and line baking trays with parchment paper.
  7. Scoop dough into balls, press into disks, and place cream cheese filling on half of them.
  8. Top with remaining dough disks, seal edges, and roll into balls, adding extra chocolate chips on top.
  9. Bake for 14-15 minutes until edges are set, then cool on the tray for 2 minutes before transferring to a wire rack.
