Ingredients

The crepes and filling

  • 4 pieces low carb crepes
  • ½ cup Heavy Whipping Cream
  • 4 tablespoons low carb sugar
  • ½ teaspoon vanilla extract
  • ½ cup sour cream

The toppings

  • 3 ounces fresh strawberries
  • 2 teaspoons Brandy, Rum, or Bourbon (optional)
  • 2 teaspoons water

Instructions

  1. Mix the Brandy (or water) with 1 tablespoon of sweetener in a small bowl until dissolved.
  2. Slice the strawberries and add them to a bowl with the Brandy mixture. Set aside to macerate.
  3. In a bowl, whip the heavy cream with the remaining sweetener and vanilla until stiff.
  4. In another bowl, whisk the sour cream to loosen it, then fold in the whipped cream gradually.
  5. Spread ¼ of the whipped cream mixture on one half of each crepe and fold.
  6. Place the filled crepes on plates and top with the macerated strawberries and juice.
