Ingredients

The crepes

  • 4 pieces low carb crepes

The filling

  • ½ cup Heavy Whipping Cream
  • 4 tablespoons low carb sugar
  • ½ teaspoon vanilla extract
  • ½ cup sour cream
  • 3 ounces fresh strawberries
  • 2 teaspoons Brandy, Rum, or Bourbon
  • 2 teaspoons water

Instructions

  1. Mix the Brandy (or water) with 1 tablespoon of sweetener and set aside.
  2. Slice the strawberries and add them to the Brandy mixture to macerate.
  3. In a bowl, whip the heavy cream with the remaining sweetener and vanilla until stiff.
  4. In another bowl, whisk the sour cream to loosen it.
  5. Fold a quarter of the whipped cream into the sour cream, then fold in the rest of the whipped cream until combined.
  6. Spread a quarter of the whipped cream mixture on one half of each crepe and fold.
  7. Place the filled crepes on plates and top with the macerated strawberries and juice.
