Vegan 7-Layer Salad

Instructions
- Thaw and warm the peas in a saucepan for 2-3 minutes, then drain and set aside.
- In a large serving dish, layer the chopped lettuce, followed by celery, peas, tomatoes, shredded carrots, green onions, and coconut bacon.
- In a medium bowl, mix vegan mayo, lemon juice, and maple syrup. Adjust the flavor as needed.
- Spread the dressing over the salad and smooth it out. Optionally, top with more coconut bacon and vegetables.
- Serve immediately or refrigerate for up to 4-6 hours. Store leftovers separately for up to 3-4 days.
