Vegan 7-Layer Salad

Ingredients

The salad

  • 1 cup frozen peas
  • 1 small head green lettuce
  • 3 stalks celery
  • 3 medium ripe tomatoes
  • 2 large carrots
  • 5 stalks green onions
  • 1 cup Coconut Bacon

The dressing

  • cups Vegan Mayonnaise
  • 1 Tbsp lemon juice
  • 2-3 Tbsp maple syrup

Instructions

  1. Thaw and warm the peas in a saucepan for 2-3 minutes, then drain and set aside.
  2. In a large serving dish, layer the chopped lettuce, followed by celery, peas, tomatoes, shredded carrots, green onions, and coconut bacon.
  3. In a medium bowl, mix vegan mayo, lemon juice, and maple syrup. Adjust the flavor as needed.
  4. Spread the dressing over the salad and smooth it out. Optionally, top with more coconut bacon and vegetables.
  5. Serve immediately or refrigerate for up to 4-6 hours. Store leftovers separately for up to 3-4 days.
