Ingredients

The salad

  • ½ pound whole chicken
  • ¾ cup mayonnaise
  • ¾ cup chopped pecans
  • 1 whole apple
  • 1 cup red grapes
  • 2 stalks celery
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper

For serving

  • Havarti cheese (or cheddar)
  • lettuce
  • 8 whole whole-wheat pitas

Instructions

  1. Cook the chicken in a slow cooker with onion and spices for about 4 hours until tender.
  2. Shred the cooked chicken and place it in a mixing bowl.
  3. Add mayonnaise, pecans, diced apple, grapes, celery, garlic powder, salt, and pepper to the bowl and mix well.
  4. Toast whole-wheat pitas and fill them with the chicken salad, adding cheese and lettuce as desired.
  5. Serve and enjoy!
