Fall Chicken Salad

Ingredients

The salad

  • 3 medium cooked chicken breasts
  • 2 cups finely diced apples
  • 1 cup chopped pecans
  • 2 cups diced celery
  • 1 cup diced cranberries
  • 1 cup diced red onion

The dressing

  • 1 cup 5% plain Greek yogurt
  • ¼ cup mayonnaise
  • ½ cup sweet relish
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp sage
  • ½ tsp garlic powder

Instructions

  1. Finely shred the chicken using a food processor or by hand.
  2. In a large bowl, combine the shredded chicken, diced apples, chopped pecans, diced celery, diced cranberries, and diced red onion.
  3. In a small bowl, whisk together the Greek yogurt, mayonnaise, sweet relish, Dijon mustard, salt, pepper, sage, and garlic powder.
  4. Pour the dressing over the chicken salad mixture and mix until well incorporated.
  5. Serve on bread, with chips, in a wrap, or on a salad.
