Sous Vide Grass Fed Tri-Tip Roast

lard or fat of choice
Instructions
- Dry the roast and season it with salt, pepper, onion powder, and garlic powder.
- Vacuum seal the seasoned roast.
- Place it in the SousVide Supreme set at 130°F for 6 hours.
- After 6 hours, remove the packet and dunk it in an ice bath for 1 hour, then store it in the fridge.
- When ready to serve, reheat the roast in the SousVide Supreme at 130°F for 30 minutes.
- Remove the tri-tip, dry it off, and sear it in hot lard in a cast iron skillet for 2 minutes on each side.
- Let the meat rest, then slice and serve.
