Ingredients

The roast

  • pounds grass fed tri-tip roast

The seasoning

  • to taste Diamond Crystal kosher salt
  • to taste Freshly ground black pepper
  • to taste Onion powder
  • to taste Garlic powder

The fat

  • 2 tablespoons lard or fat of choice

Instructions

  1. Dry the roast and season it with salt, pepper, onion powder, and garlic powder.
  2. Vacuum seal the seasoned roast.
  3. Place it in the SousVide Supreme set at 130°F for 6 hours.
  4. After 6 hours, remove the packet and dunk it in an ice bath for 1 hour, then store it in the fridge.
  5. When ready to serve, reheat the roast in the SousVide Supreme at 130°F for 30 minutes.
  6. Remove the tri-tip, dry it off, and sear it in hot lard in a cast iron skillet for 2 minutes on each side.
  7. Let the meat rest, then slice and serve.
