Instructions
- Season the tri tip on all sides with salt, garlic powder, black pepper, and thyme.
- Place the roast in a vacuum sealer bag and add soy sauce, then seal the bag.
- Marinate for up to overnight or proceed immediately.
- Preheat a water bath to 130°F.
- Add the sealed bag to the water bath and cook for 4 hours.
- Remove the tri tip and dry it with paper towels, then let it rest for 10 minutes.
- Preheat a skillet or griddle to medium-high heat, add oil, and sear the tri tip for 2 to 3 minutes per side until browned.
