Ingredients

The roast

  • 3 pounds tri tip roast

The seasoning

  • teaspoons sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon dried thyme
  • 2 tablespoons soy sauce or gluten-free tamari

For searing

  • 2 tablespoons avocado oil

Instructions

  1. Season the tri tip on all sides with salt, garlic powder, black pepper, and thyme.
  2. Place the roast in a vacuum sealer bag and add soy sauce, then seal the bag.
  3. Marinate for up to overnight or proceed immediately.
  4. Preheat a water bath to 130°F.
  5. Add the sealed bag to the water bath and cook for 4 hours.
  6. Remove the tri tip and dry it with paper towels, then let it rest for 10 minutes.
  7. Preheat a skillet or griddle to medium-high heat, add oil, and sear the tri tip for 2 to 3 minutes per side until browned.
