Cajun Zucchini Noodle Pasta

Instructions
- Spiral slice or julienne the zucchini to create noodles and place them in a strainer with salt for 30 minutes to sweat.
- Melt coconut oil in a skillet over medium heat and sauté the onion and bell peppers for about 8 minutes.
- Add mushrooms and tomatoes to the skillet and sauté for another 5 minutes.
- Rinse the zucchini noodles, pat dry, and add them to the skillet with Cajun seasoning, stirring well.
- Cook the noodles for 2 to 3 minutes until soft, then season with salt and pepper to taste before serving.
