Cajun Zucchini Noodle Pasta

Ingredients

The noodles

  • 2 whole zucchini squash, peeled

The sautéed vegetables

  • 1 tablespoon coconut oil
  • ½ whole red onion, thinly sliced
  • 1 whole red bell pepper, thinly sliced
  • 1 whole green bell pepper, thinly sliced
  • 8 oz sliced mushrooms
  • 2 whole tomatoes, chopped

Seasoning

  • 2 teaspoons Cajun seasoning
  • to taste salt
  • to taste pepper

Optional Add-ins

  • to taste chicken
  • to taste shrimp
  • to taste steak
  • to taste tofu
  • to taste beans
  • to taste lentils

Instructions

  1. Spiral slice or julienne the zucchini to create noodles and place them in a strainer with salt for 30 minutes to sweat.
  2. Melt coconut oil in a skillet over medium heat and sauté the onion and bell peppers for about 8 minutes.
  3. Add mushrooms and tomatoes to the skillet and sauté for another 5 minutes.
  4. Rinse the zucchini noodles, pat dry, and add them to the skillet with Cajun seasoning, stirring well.
  5. Cook the noodles for 2 to 3 minutes until soft, then season with salt and pepper to taste before serving.
