Ingredients

Roasted Kohlrabi

  • 1 large kohlrabi
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 1 teaspoon thyme
  • 1 tablespoon vinegar

Sautéed Kohlrabi

  • 1 small kohlrabi bulb
  • 1 cup kohlrabi greens
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste pepper
  • to taste fresh herbs
  • to taste pine nuts

Steamed Kohlrabi

  • 1 large kohlrabi

Kohlrabi Fritters

  • 1 large kohlrabi bulb
  • 1 cup flour or breadcrumbs
  • to taste dip or sauce

Instructions

  1. Cut kohlrabi into small, uniform chunks for roasting.
  2. Toss the chunks with olive oil, salt, pepper, thyme, and vinegar.
  3. Roast until caramelized and tender.
  4. For raw preparation, slice kohlrabi into discs or matchsticks.
  5. Serve raw with dips or in salads.
  6. For sautéing, slice the bulb and cook it with the greens, adding lemon juice and herbs.
  7. Steam kohlrabi by cutting or slicing it and cooking until tender.
  8. For fritters, grate the kohlrabi and mix with flour or breadcrumbs, then fry until crispy.
