Instructions
- Peel the kohlrabi and remove the skin.
- Slice the kohlrabi thinly using a mandoline or knife.
- Season the kohlrabi slices with sea salt and sprinkle with vinegar, then let sit for 10 to 15 minutes.
- Add olive oil and herbs, then toss to coat.
- Add shaved parmesan and toss gently before serving.
