Shaved Kohlrabi Salad with Basil and Parmesan

Ingredients

  • 1 to 2 bulbs kohlrabi
  • to taste nice, flaky sea salt
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • to taste Parmigiano Reggiano, shaved
  • to taste fresh herbs (basil, chives, tarragon, or dill)

Instructions

  1. Peel the kohlrabi and remove the skin.
  2. Slice the kohlrabi thinly using a mandoline or knife.
  3. Season the kohlrabi slices with sea salt and sprinkle with vinegar, then let sit for 10 to 15 minutes.
  4. Add olive oil and herbs, then toss to coat.
  5. Add shaved parmesan and toss gently before serving.
