Instructions
- Combine strawberries, sugar, lemon juice, lemon zest, and cinnamon in a medium saucepan.
- Stir the mixture and place it over medium-high heat.
- Bring to a boil, then reduce the heat to medium-low.
- Simmer while stirring occasionally until the mixture reduces by half, about 10 minutes.
- Remove from heat and stir in vanilla extract.
- Let cool to room temperature and pour into a glass jar.
- Serve warm or chilled.
