Oven Roasted Autumn Medley

Ingredients

The vegetables and sausage

  • 1 count red onion
  • 1 lb. sweet potato
  • 2 count apples
  • 8 oz. sweet Italian sausage

The seasoning and oil

  • 2 Tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp rubbed sage
  • 1 tsp dried rosemary
  • ½ tsp salt
  • ¼ tsp freshly cracked black pepper
  • 1 Tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 400ºF.
  2. Core and dice the apples, peel and dice the sweet potato and red onion into 1-inch pieces.
  3. Place the chopped apples, onions, sweet potatoes, and Italian sausage links on a large baking sheet.
  4. Drizzle olive oil over the top and add the herbs and spices, tossing to coat everything well.
  5. Roast in the preheated oven for 20 minutes.
  6. Remove the baking sheet, slice the sausage into medallions, and return it to the baking sheet.
  7. Roast for another 20 minutes or until the desired level of browning is reached.
  8. Top with chopped parsley for garnish and serve.
