Oven Roasted Autumn Medley

Instructions
- Preheat the oven to 400ºF.
- Core and dice the apples, peel and dice the sweet potato and red onion into 1-inch pieces.
- Place the chopped apples, onions, sweet potatoes, and Italian sausage links on a large baking sheet.
- Drizzle olive oil over the top and add the herbs and spices, tossing to coat everything well.
- Roast in the preheated oven for 20 minutes.
- Remove the baking sheet, slice the sausage into medallions, and return it to the baking sheet.
- Roast for another 20 minutes or until the desired level of browning is reached.
- Top with chopped parsley for garnish and serve.
