Crispy Cheddar Chicken with Cream Sauce

Ingredients

The chicken

  • 2 lbs boneless skinless chicken breasts, cut into 12 equal pieces
  • 2 tablespoons flour
  • 2 egg whites egg whites
  • 2 tablespoons skim milk
  • 1 cup cornflake crumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • 1 teaspoon dried parsley flakes
  • 3 oz shredded 50% sharp cheddar cheese

The sauce

  • 10.5 oz can Campbell’s Healthy Request Cream of Chicken condensed soup
  • 2 tablespoons fat free sour cream
  • 2 tablespoons light butter

Instructions

  1. Preheat the oven to 400°F and prepare a baking dish.
  2. Coat chicken pieces in flour inside a zip-top bag.
  3. Mix egg whites and skim milk in a shallow dish.
  4. Combine cornflake crumbs, salt, pepper, onion powder, parsley, and cheddar in another dish.
  5. Dip chicken in egg mixture, then coat with crumb mixture and place in the baking dish.
  6. Spray chicken with cooking spray and cover with foil, then bake for 35 minutes.
  7. Remove foil and bake for an additional 10-12 minutes until crispy.
  8. While chicken bakes, heat cream of chicken soup, sour cream, and butter in a saucepan until warm.
  9. Serve sauce over chicken, with two pieces of chicken and three tablespoons of sauce per serving.
